Bacon & Potato Patties Bacon & Potato Patties These Bacon & Potato Patties are crispy on the outside and soft on the inside, with savory bits of bacon and mashed potatoes. Perfect as a snack, side dish, or even a light meal. Ingredients (Makes about 8 patties) 2 large russet potatoes, peeled and cut into chunks 6 slices of bacon, cooked and crumbled 1/4 cup green onions, finely chopped (optional) 1/2 cup shredded cheddar cheese (optional) 1 egg, beaten 1/2 teaspoon garlic powder Salt and pepper, to taste 1/4 cup all-purpose flour (for dredging) 2 tablespoons vegetable oil, for frying Instructions 1. Cook the Potatoes Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender (about 10-12 minutes). Drain and mash the potatoes until smooth.
