Ingredients:

  • 4–6 boneless, skinless chicken thighs (or breasts)
  • ½ cup honey
  • ¼ cup soy sauce (low-sodium preferred)
  • 2 tablespoons hoisin sauce (optional for extra flavor)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Chopped green onions and sesame seeds, for garnish

Instructions:

  1. Prepare the Sauce:

    • In a small bowl, whisk together the honey, soy sauce, hoisin sauce (if using), rice vinegar, garlic, ginger, and red pepper flakes.
  2. Arrange the Chicken:

    • Place the chicken thighs in the slow cooker. Season both sides with salt and pepper. Pour the prepared sauce over the chicken, making sure it's well-coated.
  3. Cook the Chicken:

    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked (internal temperature should reach 165°F/74°C).
  4. Thicken the Sauce:

    • Once the chicken is done, remove it from the slow cooker and set aside.
    • In a small bowl, mix the cornstarch and water to form a slurry. Stir the slurry into the sauce in the slow cooker.
    • Cover and cook on high for an additional 10–15 minutes, or until the sauce thickens.
  5. Serve:

    • Return the chicken to the slow cooker and coat it in the thickened sauce.
    • Garnish with chopped green onions and sesame seeds. Serve over steamed rice, quinoa, or with a side of steamed vegetables.
