Ingredients:

  • 1 ½ lbs (700g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup plain yogurt (Greek or regular)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon ground turmeric (optional)
  • ½ teaspoon cayenne pepper (optional, for heat)
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers
  • Chopped fresh parsley or cilantro (for garnish)

Instructions:

  1. Prepare the Marinade:

    • In a large mixing bowl, combine the yogurt, olive oil, garlic, lemon juice, cumin, coriander, paprika, turmeric, cayenne pepper, salt, and black pepper. Mix well.
  2. Marinate the Chicken:

    • Add the chicken pieces to the marinade and toss to coat evenly.
    • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to let the flavors develop.
  3. Prepare the Skewers:

    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
    • Thread the marinated chicken pieces onto the skewers.
  4. Cook the Kebabs:

    • Grilling Method: Preheat the grill to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
    • Oven Method: Preheat the oven to 425°F (220°C). Place the skewers on a baking sheet lined with foil or a rack. Roast for 20–25 minutes, turning halfway, until fully cooked.
