  • 2 lbs (900g) Yukon gold or red potatoes, cut into wedges or thick slices
  • ¼ cup olive oil
  • 2 tablespoons melted butter
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • ⅓ cup grated Parmesan cheese
  • Fresh chopped parsley, for garnish
  • Lemon wedges, for serving

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
