Greek-Style Oven-Roasted Lemon-Butter Parmesan Potatoes

These Greek-inspired roasted potatoes are infused with lemon, butter, and Parmesan for a tangy, savory, and irresistible side dish.

Ingredients:

  • 2 lbs (900g) Yukon gold or red potatoes, cut into wedges or thick slices
  • ¼ cup olive oil
  • 2 tablespoons melted butter
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • ⅓ cup grated Parmesan cheese
  • Fresh chopped parsley, for garnish
  • Lemon wedges, for serving

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes:

    • In a large mixing bowl, combine the olive oil, melted butter, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Whisk until well blended.
    • Add the potato wedges to the bowl and toss until evenly coated with the marinade.
  3. Roast the Potatoes:

    • Arrange the potatoes in a single layer on the prepared baking sheet. Pour any remaining marinade over the top.
    • Roast in the oven for 40–45 minutes, flipping the potatoes halfway through, until golden brown and crispy on the edges.
  4. Add Parmesan:

    • In the last 10 minutes of roasting, sprinkle the grated Parmesan cheese evenly over the potatoes. Allow the cheese to melt and form a slightly crispy topping.
  5. Serve:

    • Transfer the potatoes to a serving dish. Garnish with fresh parsley and serve with lemon wedges on the side for an extra burst of citrus flavor.

These oven-roasted lemon-butter Parmesan potatoes pair perfectly with grilled meats, roasted chicken, or a fresh Greek salad. Enjoy! 🥔🍋🧄
