Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 8-10 small baby potatoes, halved or quartered
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme or fresh thyme (optional)
  • Salt and freshly ground black pepper, to taste

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the Potatoes:

    • In a large bowl, toss the halved baby potatoes with 1 tablespoon olive oil, salt, and pepper. Spread the potatoes out on the baking sheet in a single layer.
    • Roast the potatoes in the preheated oven for 15 minutes to give them a head start.
