Clearly, I have lost some of my appeals. I'll explain. We took the family to Park City, Utah, for a day last summer. You likely believe, as I did, that Park City is exclusively a winter destination, but someone brilliantly had the bright idea to build an Alpine slide, a zip line, and a roller coaster to draw visitors to the town in the summer and fall. First thing, we went right to the zip line.

I'm a little terrified of heights, but I prefer to push through my fears. It feels fantastic to have faced a fear and overcome it. Even though I knew I would be alright once the zip line started, the anticipation was making my anxiety skyrocket! I sat down within the harness, which resembled a chair. 

Then, while still strapped in, you put your feet on a hinged gate and wait for the attendant to open it so you may leave. I was now trembling, perspiring, and a bit queasy. When the door was about to swing open, I requested the friendly—or so I thought—young man to say "now."

Sure, he replied, but his tone and conviction were lacking. I waited for him to say anything, counting every spooky and thrilling second. I stumbled down the zip line as the door flew open and I overheard a monotonous voice saying, "Now." Really?

The Alpine slide was the next stop, and we had to cross the zip line to get there. The same guy was putting the harness on two pretty females who were close to his age. 

I heard his voice in the distance as we proceeded to ascend to the slide asking, "Ready? "Now, one, two, three!" I'm not joking! He didn't speak in a monotone for those females; instead, he was brimming with enthusiasm. Hold on, I guess. Was I confused in any way when I asked for the same thing?

I am thus no longer as charming as I once was. To my husband, though, I still had it. My spouse and I have been concentrating on healthy food for the past five months because we really enjoy each other and want to live long, happy lives together. 

Look at your calendar. You'll see that the Christmas season is included in those five months. Are you kidding me? Despite being surrounded by treats, he shed almost 50 pounds and I lost 30.

Therefore, we want to encourage you to persevere if you feel that your New Year's resolution to develop a healthy eating habit is failing. During the holidays, we allowed ourselves to indulge in a little bit of nice food here and there, but we quickly returned to eating healthily and avoided falling back into bad habits. 

One thing we've discovered is that in order to be healthy, one must come to appreciate their veggies. They now make up the majority of our diet. My favorite meal of the day is breakfast. I was excited to try Apron Strings' healthy breakfast suggestion when I saw it. The preparation time for these bell pepper-sautéed eggs was less than ten minutes. They were filling, nutritious, and oh-so-delicious.

I'm all about breakfast foods like pancakes, muffins, waffles, hash browns, crepes, and bread in general. Just occasionally. The Bell Pepper Sautéed Eggs are a fantastic meal to wake up your body and mind. 

Additionally, the method of cooking results in silky-textured eggs. No torn-through fried rubber bottoms. Simply modify the cooking time to suit your preferred egg texture. I want my yolks to be cooked to a medium level, with a little bit of runniness remaining. Mmm!

INGREDIENTS
  • Cut one bell pepper into 3/4-inch rings.
  • 1 Big Egg
  • One teaspoon of butter
  • One teaspoon of water
INSTRUCTIONS
  • Melt the butter in a nonstick pan over medium heat.
  • Add pepper rings after lowering the heat to medium-low.
  • The pepper rings should be cooked for 1-2 minutes to soften and develop a sweeter taste.
  • The egg should be cracked and slowly poured into the pepper ring so that it doesn't seep out underneath the ring. (Don't worry, if some spills out, it still looks and tastes fantastic.)
  • Depending on how you prefer your eggs cooked, add 1 tablespoon of water and cover the pan for 2–5 minutes.
  • Enjoy with a little salt and pepper!
