A divine combination of angel food cake and devil’s food cake, layered with a luscious peanut butter mousse and finished with a rich ganache. This cake is a true indulgence!


Ingredients:

For the Angel Food Cake:

  • 1 cup cake flour

  • 1 ½ cups granulated sugar (divided)

  • 12 large egg whites (room temperature)

  • 1 ½ teaspoons cream of tartar

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract

For the Devil’s Food Cake:

  • 1 cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¾ cup buttermilk

For the Peanut Butter Mousse:

  • 1 ½ cups heavy cream

  • ½ cup powdered sugar

  • 1 cup creamy peanut butter

  • ½ teaspoon vanilla extract

For the Chocolate Ganache:

  • 1 cup heavy cream

  • 8 oz dark chocolate, chopped


Instructions:

Step 1: Make the Angel Food Cake

  1. Preheat oven to 350°F (175°C).

  2. Sift together cake flour and ½ cup sugar.

  3. In a large bowl, beat egg whites, cream of tartar, and salt until foamy.

  4. Gradually add the remaining 1 cup sugar, beating until stiff peaks form.

  5. Fold in vanilla extract and sifted flour mixture gently.

  6. Pour into an ungreased tube pan and bake for 35-40 minutes. Cool upside down before removing from the pan.

Step 2: Make the Devil’s Food Cake

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  2. In a bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.

  3. In another bowl, cream butter and sugar until fluffy.

  4. Add eggs and vanilla, mixing well.

  5. Alternate adding dry ingredients and buttermilk, mixing until just combined.

  6. Pour into the prepared pan and bake for 30-35 minutes. Cool completely.

Step 3: Make the Peanut Butter Mousse

  1. Beat heavy cream and powdered sugar until soft peaks form.

  2. Add peanut butter and vanilla, whipping until fluffy and smooth.

Step 4: Make the Ganache

  1. Heat heavy cream in a saucepan until it just starts to simmer.

  2. Pour over the chopped chocolate and let sit for 5 minutes.

  3. Stir until smooth and glossy.

Step 5: Assemble the Cake

  1. Place the devil’s food cake layer on a cake board.

  2. Spread half of the peanut butter mousse over it.

  3. Place the angel food cake layer on top.

  4. Spread the remaining peanut butter mousse evenly.

  5. Pour the chocolate ganache over the cake, letting it drip down the sides.
