Ingredients:

For the Cake:

  • 1 cup mashed sweet potato (about 1 medium sweet potato)

  • 1 ½ cups all-purpose flour

  • ½ cup cocoa powder

  • 1 ½ teaspoons baking soda

  • ½ teaspoon salt

  • 1 teaspoon cinnamon (optional)

  • ½ cup vegetable oil or melted coconut oil

  • ¾ cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ½ cup buttermilk (or milk + 1 tsp vinegar)

  • ½ cup hot coffee (or hot water)

For the Chocolate Ganache Frosting:

  • 1 cup dark chocolate chips

  • ½ cup heavy cream

  • 1 tablespoon butter (optional, for extra shine)


Instructions:

Step 1: Prepare the Sweet Potato

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  2. Roast or microwave the sweet potato until soft. Mash it well and let it cool.

Step 2: Make the Cake Batter

  1. In a bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.
