Chocolate Sweet Potato Cake
Ingredients:
For the Cake:

1 cup mashed sweet potato (about 1 medium sweet potato)

1 ½ cups all-purpose flour

½ cup cocoa powder

1 ½ teaspoons baking soda

½ teaspoon salt

1 teaspoon cinnamon (optional)

½ cup vegetable oil or melted coconut oil

¾ cup brown sugar

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk (or milk + 1 tsp vinegar)

½ cup hot coffee (or hot water)
For the Chocolate Ganache Frosting:

1 cup dark chocolate chips

½ cup heavy cream
-
1 tablespoon butter (optional, for extra shine)
Instructions:
Step 1: Prepare the Sweet Potato

Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

Roast or microwave the sweet potato until soft. Mash it well and let it cool.
Step 2: Make the Cake Batter

In a bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.

In a separate bowl, beat together oil, brown sugar, granulated sugar, eggs, vanilla, and mashed sweet potato until smooth.

Add the dry ingredients to the wet ingredients in batches, alternating with buttermilk.

Stir in the hot coffee until the batter is smooth.
Step 3: Bake the Cake

Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool completely before frosting.
Step 4: Make the Ganache Frosting

Heat heavy cream in a saucepan until just simmering, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth.

Stir in butter for extra shine. Let cool slightly before spreading over the cake.
Step 5: Assemble and Serve
