🍌 Bananas Foster Bourbon Bundt Cakes

👩‍🍳 Makes: 1 large bundt cake or 12 mini bundt cakes


🍰 Cake Ingredients:

  • 2 ripe bananas, mashed

  • 2½ cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¾ cup unsalted butter, softened

  • 1 cup light brown sugar, packed

  • ½ cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup full-fat sour cream (or Greek yogurt)

  • ¼ cup bourbon

  • ½ cup whole milk


🍯 Bourbon Caramel Glaze:

  • ½ cup unsalted butter

  • 1 cup brown sugar

  • ¼ cup heavy cream

  • 2 tbsp bourbon

  • Pinch of salt


🔥 Optional Flambéed Bananas Topping:

  • 2 tbsp butter

  • 2 tbsp brown sugar

  • 2 ripe bananas, sliced

  • 2 tbsp bourbon (for flambéing)


🧁 Instructions:

1. Prep the Pan

  • Preheat oven to 350°F (175°C).

  • Grease and flour a large bundt pan or mini bundt pans generously.

2. Make the Cake Batter

  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  2. In a large bowl, cream butter with both sugars until fluffy.

  3. Beat in eggs one at a time. Mix in vanilla and mashed bananas.

  4. Mix in sour cream and bourbon.

  5. Add flour mixture in 3 parts, alternating with milk, starting and ending with flour. Don’t overmix.

3. Bake

  • Spoon batter evenly into pan(s).

  • Bake large cake for 50–60 minutes, mini cakes for 20–25 minutes, or until a toothpick comes out clean.

  • Cool in pan for 15 mins, then turn out onto a wire rack.
