📝 Ingredients

For the Banana Cake:

  • 1½ cups mashed ripe bananas (about 3 medium)

  • ½ cup unsalted butter, softened

  • ¾ cup light brown sugar

  • ¼ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream or Greek yogurt

  • 1¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon

For the Cinnamon Streusel Topping:

  • ⅔ cup light brown sugar

  • ½ cup all-purpose flour

  • 1½ tsp cinnamon

1. Prep

  • Preheat oven to 350°F (175°C).

2. Make the Streusel

  • In a bowl, mix brown sugar, flour, and cinnamon.

  • Cut in cold butter with a fork or pastry cutter until crumbly.

  • Stir in nuts if using. Set aside.

3. Make the Banana Cake Batter

  1. In a large bowl, cream the butter and sugars together until fluffy.

  2. Add eggs one at a time, then mix in mashed bananas, vanilla, and sour cream.

  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
