🍌 Banana Bread Coffee Cake
Moist banana bread meets crumbly, cinnamon-streusel-topped coffee cake.
🍽️ Makes: 1 (9x9-inch) cake
⏱️ Total Time: ~1 hour
📝 Ingredients
For the Banana Cake:

1½ cups mashed ripe bananas (about 3 medium)

½ cup unsalted butter, softened
-
¾ cup light brown sugar
-
¼ cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
½ cup sour cream or Greek yogurt
-
1¾ cups all-purpose flour
-
1 tsp baking soda
-
½ tsp baking powder
-
½ tsp salt
-
1 tsp cinnamon
For the Cinnamon Streusel Topping:

⅔ cup light brown sugar
-
½ cup all-purpose flour
-
1½ tsp cinnamon
-
¼ cup unsalted butter, cold and cubed
-
½ cup chopped walnuts or pecans (optional)
Optional Vanilla Glaze:
-
½ cup powdered sugar
-
1–2 tbsp milk or cream
-
½ tsp vanilla extract
👩🍳 Instructions
1. Prep
-
Preheat oven to 350°F (175°C).

Grease a 9x9-inch baking pan or line with parchment paper.
2. Make the Streusel
-
In a bowl, mix brown sugar, flour, and cinnamon.

Cut in cold butter with a fork or pastry cutter until crumbly.

Stir in nuts if using. Set aside.
3. Make the Banana Cake Batter
-
In a large bowl, cream the butter and sugars together until fluffy.

Add eggs one at a time, then mix in mashed bananas, vanilla, and sour cream.

In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

Gradually mix dry ingredients into wet until just combined.
4. Assemble the Layers

Spread half the banana batter into the pan.

Sprinkle half the streusel over it.

Add the remaining batter and top with the rest of the streusel.
5. Bake

Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.

Cool in the pan for 15–20 minutes.
6. Optional Glaze

Whisk glaze ingredients together and drizzle over the slightly cooled cake.
