- 1 tablespoon fresh lemon juice

- 4 tablespoons unsalted butter, softened
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon lemon zest
- Pinch of salt
For the Sides:
- 2 cups mashed potatoes (prepared or homemade)
- 8-10 asparagus spears, trimmed
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
1. Prepare the Garlic Herb Butter
- In a small bowl, mix softened butter with minced garlic, parsley, lemon zest, and a pinch of salt. Set aside.
2. Cook the Steak
- Let the steaks sit at room temperature for 30 minutes. Pat them dry and season generously with salt and pepper.
- Heat a cast iron skillet over medium-high heat. Add olive oil.
- Sear the steaks for 3-4 minutes per side (adjust based on desired doneness). Add garlic and rosemary during the last minute, spooning the infused oil over the steaks.
