 New England Style Steamer Clams

New England Style Steamer Clams

Steamer clams, also known as soft-shell clams, are a classic New England dish. This simple recipe highlights their natural sweetness and brininess, served with a side of melted butter for dipping.

Ingredients

(Serves 4)

  • 4 pounds steamer clams (soft-shell clams)
  • 4 cups water
  • 1 cup dry white wine (optional)
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or parsley (optional)
  • 4 tablespoons unsalted butter, melted (for serving)
  • Lemon wedges (for serving)

Instructions

1. Clean the Clams

  • Place the clams in a large bowl filled with cold, salted water (about 1 tablespoon of salt per quart of water).
  • Let them soak for 20-30 minutes to purge any sand. Rinse and repeat if needed.

2. Prepare the Pot

  • In a large pot, combine the water, wine (if using), garlic, and thyme or parsley. Bring the mixture to a simmer over medium heat.

3. Steam the Clams

  • Add the clams to the pot and cover with a tight-fitting lid.
  • Steam the clams for 6-10 minutes, or until the shells open. Shake the pot occasionally to ensure even cooking.
  • Discard any clams that do not open.

4. Serve the Clams

  • Transfer the clams to a large serving bowl using a slotted spoon. Strain the steaming liquid through a fine mesh sieve or cheesecloth into a bowl to remove any sand, and serve it alongside the clams as a broth.

5. Enjoy with Butter

  • Serve the clams with melted butter and lemon wedges on the side. Dip the clams in the butter and enjoy!

Tips

  • Fresh Clams: Ensure the clams are alive before cooking. They should close when tapped lightly.
  • Sand Removal: Cleaning the clams properly is essential to avoid a gritty texture.
  • Sides: Pair with crusty bread or boiled potatoes to soak up the delicious broth.

This New England Style Steamer Clams recipe is the perfect way to enjoy the authentic flavors of the seaside. 🦪🍋🧈
