Spring Onion Soup Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cups spring onions (scallions), chopped (including both green and white parts)
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 large potato, peeled and diced
  • 1 tsp thyme (optional)
  • Salt and pepper, to taste
  • 1/2 cup heavy cream or coconut milk (optional, for creaminess)
  • Fresh herbs (like parsley) for garnish

Instructions

  1. Prepare the Vegetables:

    • Rinse and chop the spring onions (both the green and white parts). Peel and dice the potato.
  2. Cook the Onions and Garlic:

    • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for another minute.
  3. Add the Spring Onions and Potato:

    • Stir in the chopped spring onions and diced potato. Cook for about 5 minutes, stirring occasionally, until the onions start to soften.
  4. Add Broth and Simmer:

    • Pour in the vegetable or chicken broth. Add the thyme (if using), salt, and pepper. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. Blend the Soup:

    • Use an immersion blender to blend the soup until smooth and creamy. Alternatively, you can blend it in batches using a regular blender. If you prefer a chunkier texture, blend only half of the soup.
  6. Finish with Cream (Optional):

    • If desired, stir in heavy cream or coconut milk for added creaminess. Adjust the seasoning with more salt and pepper if needed.
  7. Serve and Garnish:

    • Ladle the soup into bowls and garnish with fresh herbs like parsley or extra spring onions.

Serving Suggestions:

  • Serve with crusty bread or a side of grilled cheese for a comforting meal.
  • Add a squeeze of lemon juice or a dash of hot sauce for extra flavor.

Enjoy the fresh, vibrant taste of spring onions in this warming soup! 🌱🍲
