Spicy Pineapple Shrimp

This Spicy Pineapple Shrimp dish combines the sweetness of pineapple with a spicy kick, making it a tropical and flavorful delight. It’s quick to prepare and pairs perfectly with rice or noodles for a complete meal.

Ingredients

(Serves 4)

  • 1 pound large shrimp, peeled and deveined
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon olive oil or vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon Sriracha (adjust to taste)
  • 1/2 teaspoon red pepper flakes (optional)
  • Juice of 1 lime
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • Cooked jasmine rice or noodles (for serving)

Instructions

1. Prepare the Shrimp

  • Rinse the shrimp and pat them dry with paper towels. Season lightly with salt and pepper.

2. Make the Sauce

  • In a small bowl, whisk together soy sauce, honey, Sriracha, lime juice, and red pepper flakes (if using). Set aside.

3. Sauté the Vegetables

  • Heat the oil in a large skillet or wok over medium-high heat. Add the red bell pepper, red onion, pineapple chunks, garlic, and ginger. Cook for 3-4 minutes, stirring frequently, until the vegetables are slightly softened and fragrant.

4. Cook the Shrimp

  • Push the vegetables to the side of the skillet. Add the shrimp to the center and cook for 1-2 minutes per side until they turn pink and opaque.

5. Combine and Finish

  • Pour the sauce over the shrimp and vegetables. Toss everything together and cook for an additional 1-2 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.

6. Serve

  • Transfer the spicy pineapple shrimp to a serving dish. Garnish with fresh cilantro and serve immediately with jasmine rice or noodles.

Tips

  • Fresh Pineapple: Fresh pineapple gives the best flavor and texture, but canned works well in a pinch.
  • Make It Mild: Reduce or omit the Sriracha and red pepper flakes for a milder version.
  • Extra Sauce: Double the sauce ingredients if you want extra to drizzle over rice or noodles.
  • Add Crunch: Sprinkle toasted sesame seeds or chopped cashews for added texture.

This Spicy Pineapple Shrimp is a sweet and spicy crowd-pleaser that brings a taste of the tropics to your table. 🍤🍍🌶️
