Shrimp Scampi with Zucchini Noodles
Shrimp Scampi with Zucchini Noodles
This Shrimp Scampi with Zucchini Noodles is a light and healthy twist on the classic shrimp scampi, replacing traditional pasta with spiralized zucchini noodles. It’s a flavorful, low-carb meal that’s quick to prepare and packed with garlic, lemon, and buttery goodness.
Ingredients
(Serves 2)
- 1 pound large shrimp, peeled and deveined
- 4 medium zucchini, spiralized into noodles
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup white wine (or chicken broth)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Freshly grated Parmesan cheese (optional, for garnish)
Instructions
1. Prepare the Zucchini Noodles
- Use a spiralizer to turn the zucchini into noodles (or buy pre-spiralized zucchini).
- Place the zucchini noodles in a colander, sprinkle with a little salt, and let them sit for 10-15 minutes to release excess water. Pat dry with paper towels to ensure they don’t become too watery when cooked.
2. Cook the Shrimp
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they are opaque and pink. Remove the shrimp from the skillet and set aside.
3. Make the Scampi Sauce
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and red pepper flakes (if using). Sauté for 1 minute, stirring frequently, until the garlic becomes fragrant but not browned.
- Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes, allowing it to reduce slightly.
4. Cook the Zucchini Noodles
- Add the zucchini noodles to the skillet with the scampi sauce. Toss to coat the noodles in the sauce and cook for 2-3 minutes, just until they begin to soften but still have a slight bite. Be careful not to overcook, as zucchini noodles can become mushy.
5. Combine Shrimp and Sauce
- Return the cooked shrimp to the skillet and toss them with the zucchini noodles and sauce for 1-2 minutes until everything is well coated and heated through.
- Add lemon zest, salt, and pepper to taste.
6. Serve
- Transfer to serving plates and garnish with fresh parsley. Top with freshly grated Parmesan cheese, if desired.
Tips
- Dry the Zucchini Noodles: After spiralizing, make sure to pat the zucchini noodles dry to reduce excess moisture and avoid a watery dish.
- Add-ins: Feel free to add other vegetables like cherry tomatoes or spinach for extra flavor and color.
- For a Creamy Twist: Add a splash of heavy cream to the sauce for a richer, creamier texture.
This Shrimp Scampi with Zucchini Noodles is a healthy, flavorful meal that brings all the deliciousness of traditional scampi with a lighter twist. Perfect for a weeknight dinner or a special occasion! 🍤🍋🌱
