  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into noodles
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup white wine (or chicken broth)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Zucchini Noodles

  • Use a spiralizer to turn the zucchini into noodles (or buy pre-spiralized zucchini).
  • Place the zucchini noodles in a colander, sprinkle with a little salt, and let them sit for 10-15 minutes to release excess water. Pat dry with paper towels to ensure they don’t become too watery when cooked.

2. Cook the Shrimp

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they are opaque and pink. Remove the shrimp from the skillet and set aside.

3. Make the Scampi Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and red pepper flakes (if using). Sauté for 1 minute, stirring frequently, until the garlic becomes fragrant but not browned.
  • Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes, allowing it to reduce slightly.

4. Cook the Zucchini Noodles

  • Add the zucchini noodles to the skillet with the scampi sauce. Toss to coat the noodles in the sauce and cook for 2-3 minutes, just until they begin to soften but still have a slight bite. Be careful not to overcook, as zucchini noodles can become mushy.

5. Combine Shrimp and Sauce

  • Return the cooked shrimp to the skillet and toss them with the zucchini noodles and sauce for 1-2 minutes until everything is well coated and heated through.
  • Add lemon zest, salt, and pepper to taste.

6. Serve

  • Transfer to serving plates and garnish with fresh parsley. Top with freshly grated Parmesan cheese, if desired.
