Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil (or sesame oil for more flavor)
- 5 cloves garlic, minced
- 1/4 cup sake (Japanese rice wine)
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar (to balance the sauce)
- 1 teaspoon fresh ginger, grated (optional for extra flavor)
- 1 tablespoon rice vinegar (or white vinegar)
- 1 tablespoon sesame oil (optional, for added richness)
- 1/4 teaspoon red pepper flakes (optional for heat)
- 2 tablespoons green onions, sliced (for garnish)
- Toasted sesame seeds (optional for garnish)
- Fresh cilantro or parsley, chopped (optional for garnish)
Instructions:

Prepare the Shrimp:
- Pat the shrimp dry with paper towels to remove excess moisture. This helps them sear better when cooking.

Cook the Shrimp:
- Heat the vegetable or sesame oil in a large skillet or wok over medium-high heat. Once hot, add the shrimp in a single layer and cook for 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook them. Once done, remove the shrimp from the skillet and set them aside.

Make the Sake-Garlic Sauce:
- In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute, or until fragrant, being careful not to burn the garlic.
- Add the sake to the skillet, scraping the bottom of the pan to loosen any flavorful bits stuck to the surface. Let it simmer for 2-3 minutes to reduce slightly.
- Stir in the soy sauce, honey (or sugar), rice vinegar, sesame oil (if using), and red pepper flakes (if desired). Simmer for an additional 2-3 minutes, allowing the sauce to thicken slightly and become glossy.

- Return the cooked shrimp to the skillet, tossing them in the sauce to coat evenly. Let the shrimp simmer in the sauce for 1-2 minutes, allowing the flavors to meld.

- Remove the skillet from the heat. Garnish the shrimp with sliced green onions, toasted sesame seeds, and chopped fresh cilantro or parsley if desired.
