Ingredients

  • Seafood:

    • 1 lb (450g) cooked shrimp, peeled and deveined
    • 1 lb (450g) lump crab meat or imitation crab, flaked
    • ½ lb (225g) calamari rings, cooked and cooled (optional)
    • ½ lb (225g) cooked bay scallops (optional)
  • Vegetables and Add-Ins:

    • 1 cup (150g) cherry tomatoes, halved
    • 1 cucumber, diced
    • ½ red onion, thinly sliced
    • 1 red bell pepper, diced
    • ¼ cup (35g) black or green olives, sliced
    • ¼ cup (35g) capers (optional)
    • 2 tablespoons fresh parsley or cilantro, chopped
  • Dressing:

    • ⅓ cup (80ml) olive oil
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon white wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 clove garlic, minced
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon dried oregano or Italian seasoning

Instructions

  1. Prepare the Dressing:
