Savory Sea Scallops In White Wine Sauce

Savory Sea Scallops in White Wine Sauce

Savory Sea Scallops in White Wine Sauce

This Savory Sea Scallops in White Wine Sauce recipe is a perfect balance of rich, tender scallops and a delicate, flavorful white wine sauce. The scallops are seared to a perfect golden-brown and then simmered in a buttery white wine sauce that brings out their natural sweetness.

Ingredients

(Serves 4)

For the Scallops:

  • 1 pound sea scallops (about 12-16 scallops)
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste

For the White Wine Sauce:

  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/4 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

1. Prepare the Scallops

  • Pat the scallops dry with paper towels to remove any excess moisture. This helps achieve a good sear.
  • Season both sides of the scallops with salt and pepper.

2. Sear the Scallops

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Once the oil is hot, add the scallops to the pan. Be sure not to overcrowd them.
  • Sear the scallops for about 2-3 minutes on each side, until they are golden brown and caramelized.
  • Remove the scallops from the pan and set them aside on a plate.

3. Make the White Wine Sauce

  • In the same skillet, add the minced garlic and sauté for 30 seconds, until fragrant.
  • Pour in the white wine and chicken broth, scraping the bottom of the skillet to release any browned bits.
  • Bring the mixture to a simmer and cook for about 2-3 minutes, allowing the sauce to reduce by about half.
  • Stir in the heavy cream, lemon juice, and fresh thyme.
  • Continue to simmer for another 2-3 minutes, until the sauce thickens slightly.
  • Stir in the butter until melted and the sauce becomes creamy. Taste and adjust seasoning with salt and pepper, if needed.

4. Combine Scallops with the Sauce

  • Return the seared scallops to the skillet and spoon some of the sauce over the top.
  • Simmer for an additional 2-3 minutes to heat the scallops through and allow them to soak in some of the sauce.

5. Serve

  • Arrange the scallops on a serving platter or individual plates.
  • Pour the white wine sauce over the top and garnish with fresh parsley and a squeeze of lemon.
  • Serve with your favorite side dishes, such as rice, pasta, or a green vegetable.

Tips

  • Avoid Overcrowding: When searing the scallops, make sure not to overcrowd the pan, as this can cause them to steam rather than sear.
  • Wine Choice: Choose a dry white wine with good acidity to balance the richness of the sauce.
  • Extra Flavor: For a more intense garlic flavor, you can add an additional garlic clove or a touch of garlic powder to the sauce.
  • For Extra Creaminess: If you prefer a richer sauce, you can add more cream or even a bit of mascarpone cheese.

This Savory Sea Scallops in White Wine Sauce is an elegant, flavorful dish that pairs wonderfully with a light salad, roasted vegetables, or buttery mashed potatoes. It’s perfect for a romantic dinner or a special occasion. 🦑🍷
