Ingredients

  • Seafood:

    • 1 lb (450g) fresh salmon fillet, cut into 1-inch cubes
    • 1 lb (450g) large scallops, rinsed and patted dry
  • Vegetables (optional):

    • 1 red bell pepper, cut into 1-inch pieces
    • 1 zucchini, sliced into thick rounds
    • 1 red onion, cut into chunks
  • Marinade:

    • ⅓ cup (80ml) olive oil
    • 2 tablespoons soy sauce
    • 2 tablespoons lemon juice
    • 2 cloves garlic, minced
    • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
    • 1 teaspoon smoked paprika
    • ½ teaspoon black pepper
    • ½ teaspoon salt
  • Garnish:

    • Lemon wedges
    • Fresh parsley or dill

Instructions

  1. Prepare the Marinade:

    • In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic, dill, paprika, salt, and pepper.
  2. Marinate the Seafood:
