Ingredients

Seafood:
- 1 lb (450g) fresh salmon fillet, cut into 1-inch cubes
- 1 lb (450g) large scallops, rinsed and patted dry

- 1 red bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into chunks

Marinade:
- ⅓ cup (80ml) olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt

- Lemon wedges
- Fresh parsley or dill

Prepare the Marinade:
- In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic, dill, paprika, salt, and pepper.

Marinate the Seafood:
- Place salmon cubes and scallops in a shallow dish or resealable plastic bag. Pour the marinade over the seafood, ensuring all pieces are coated.
- Cover and refrigerate for at least 30 minutes, up to 2 hours.

Prepare the Skewers:
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated salmon and scallops onto the skewers, alternating with pieces of bell pepper, zucchini, and onion, if desired.

- Heat your grill to medium-high (375–400°F / 190–200°C). Lightly oil the grates to prevent sticking.

Grill the Kabobs:
- Place the skewers on the grill. Cook for about 3–4 minutes per side, turning carefully to avoid breaking the salmon.
- The salmon should be opaque and slightly charred, and the scallops should be firm and golden on the outside.

- Remove the kabobs from the grill and transfer them to a serving platter. Garnish with lemon wedges and fresh parsley or dill.
Tips
- For an extra layer of flavor, brush the kabobs with leftover marinade during the first few minutes of grilling.
