Ingredients

  • 2 lbs (about 1 kg) Yukon Gold or Russet potatoes, peeled and cubed
  • 1 whole head of garlic
  • 3 tbsp olive oil or butter (for roasting the garlic)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream or milk (adjust for desired consistency)
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Roast the Garlic:

    • Preheat your oven to 400°F (200°C).
    • Cut off the top of the garlic head to expose the cloves.
    • Drizzle with olive oil or spread butter over the exposed cloves, then wrap in aluminum foil.
    • Roast for 35-40 minutes, or until the garlic is golden brown and soft. Let cool slightly, then squeeze the roasted garlic out of the cloves and set aside.
  2. Cook the Potatoes:

    • Place the peeled and cubed potatoes in a large pot.
    • Cover with cold water and add a generous pinch of salt.
    • Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  3. Mash the Potatoes:

    • Drain the cooked potatoes and return them to the pot.
    • Add the roasted garlic, butter, and heavy cream (or milk).
