Ingredients:

  • 4 medium-sized potatoes, peeled and cut into thin strips (julienned)
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2-3 cloves garlic, minced
  • 1-2 green chilies, chopped (adjust to your spice preference)
  • 1 bell pepper, thinly sliced (optional)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar (optional for sweetness)
  • 1/2 teaspoon chili powder (optional for added heat)
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon ground coriander
  • 1 teaspoon sesame oil
  • 2-3 tablespoons water (if needed for stir-frying)

Instructions:

  1. Prepare the Potatoes:

  5. Mix in the Sauces and Spices:

    • Stir in the soy sauce, rice vinegar, sugar, chili powder, black pepper, and ground coriander. Stir to combine and let it cook for 1-2 minutes to allow the flavors to meld.
  6. Combine with Potatoes:

    • Return the fried potatoes to the wok, toss gently to coat them with the sauce mixture. Add 2-3 tablespoons of water if needed to help mix the sauce. Cook for another 2-3 minutes, allowing the potatoes to soak up the flavors.
  7. Finish with Sesame Oil:
