Ingredients
(Serves 4-6)
- 6 large eggs
- 1/4 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 strips bacon, chopped
- 2 medium potatoes, peeled and diced (about 2 cups)
- 1 small onion, finely chopped
- 1/2 cup shredded cheese (cheddar, gruyere, or mozzarella)
- 2 tablespoons olive oil or butter
- 2 tablespoons fresh parsley or chives, chopped (for garnish)
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
2. Cook the Bacon
- In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Leave about 1-2 tablespoons of bacon fat in the skillet.
3. Cook the Potatoes and Onion
- Add the diced potatoes to the skillet and cook over medium heat for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
- Add the chopped onion and cook for another 2-3 minutes, until softened. Remove from heat and set aside.
4. Prepare the Egg Mixture
- In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper. Stir in the cooked bacon and half of the shredded cheese.
5. Assemble the Frittata
- Return the skillet with the potatoes and onion to medium heat. Spread the potato mixture evenly in the skillet.
- Pour the egg mixture over the potatoes, spreading it out evenly. Sprinkle the remaining cheese on top.
6. Cook and Bake
- Cook the frittata on the stovetop for 2-3 minutes, until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the center is set and the top is golden.
7. Serve
- Remove the frittata from the oven and let it cool for 5 minutes. Garnish with fresh parsley or chives. Slice into wedges and serve warm.
