Ingredients

  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 strips bacon, chopped
  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 1 small onion, finely chopped
  • 1/2 cup shredded cheese (cheddar, gruyere, or mozzarella)
  • 2 tablespoons olive oil or butter
  • 2 tablespoons fresh parsley or chives, chopped (for garnish)

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C).

2. Cook the Bacon

  • In a large oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Leave about 1-2 tablespoons of bacon fat in the skillet.

3. Cook the Potatoes and Onion

  • Add the diced potatoes to the skillet and cook over medium heat for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
  • Add the chopped onion and cook for another 2-3 minutes, until softened. Remove from heat and set aside.

4. Prepare the Egg Mixture

  • In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper. Stir in the cooked bacon and half of the shredded cheese.

5. Assemble the Frittata

  • Return the skillet with the potatoes and onion to medium heat. Spread the potato mixture evenly in the skillet.
  • Pour the egg mixture over the potatoes, spreading it out evenly. Sprinkle the remaining cheese on top.

6. Cook and Bake

  • Cook the frittata on the stovetop for 2-3 minutes, until the edges start to set.
  • Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the center is set and the top is golden.
