Ingredients (Serves 8-10)
For the Tart Crust:
- 1 ¼ cups all-purpose flour
- ¼ cup powdered sugar
- ½ teaspoon salt
- ½ cup unsalted butter (cold, cubed)
- 1 egg yolk
- 1-2 tablespoons ice water
For the Pistachio Filling:
- 1 cup shelled pistachios (unsalted, toasted)
- ½ cup granulated sugar
- 2 tablespoons honey
- ½ cup unsalted butter (softened)
- 2 large eggs
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional, enhances nutty flavor)
For the Garnish:
- Chopped pistachios
- Powdered sugar
- Edible gold leaf (optional, for elegance!)
Instructions
1️⃣ Make the Tart Crust
- In a food processor, pulse flour, powdered sugar, and salt until combined.
- Add butter and pulse until the mixture resembles coarse crumbs.
- Add egg yolk and ice water, one tablespoon at a time, until the dough just comes together.
- Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and press into a 9-inch tart pan.
- Poke the bottom with a fork and freeze for 15 minutes.
- Preheat oven to 350°F (175°C) and blind bake the crust:
- Line with parchment paper and fill with pie weights or beans.
- Bake for 15 minutes, remove weights, and bake for another 5-7 minutes until golden.
2️⃣ Make the Pistachio Filling
- In a food processor, blend pistachios and sugar until finely ground.
- Add honey, butter, eggs, heavy cream, vanilla, and almond extract, and blend until smooth.
- Pour the filling into the baked crust and smooth the top.
3️⃣ Bake the Tart
- Bake at 350°F (175°C) for 25-30 minutes, until the filling is set and slightly golden.
- Cool completely before removing from the tart pan.
4️⃣ Garnish & Serve
- Dust with powdered sugar and top with chopped pistachios.
- (Optional) Add edible gold leaf for a luxurious finish.
