Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti (or your favorite pasta)
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 cups chicken or vegetable broth
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Chardonnay)
  • Juice and zest of 2 limes
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)
  • Salt and freshly ground black pepper, to taste
  • Lime wedges, for serving

Instructions:

1. Cook the Pasta:

  • In a large, deep skillet or pot, bring the chicken or vegetable broth and white wine to a boil. Add the linguine and cook according to package instructions until al dente. Stir occasionally to prevent sticking.
  • Once the pasta is cooked, drain it and reserve about 1/2 cup of the cooking liquid. Set the pasta aside.

2. Cook the Shrimp:

  • In the same pot, heat the olive oil and 2 tablespoons of butter over medium heat.
  • Add the shrimp in a single layer, season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side until the shrimp turn pink and are just cooked through. Remove the shrimp and set them aside.

3. Make the Sauce:

  • In the same pot, add the remaining tablespoon of butter. Stir in the minced garlic and cook for 1 minute, until fragrant.
  • Pour in the lime juice and zest, scraping up any browned bits from the bottom of the pot.
  • Return the pasta to the pot, tossing to coat it in the sauce. Add a splash of the reserved pasta water if needed to loosen the sauce.

4. Combine and Finish:

  • Add the cooked shrimp back to the pot along with the chopped cilantro. Toss everything together gently to combine and warm through.

5. Serve:

  • Plate the cilantro lime shrimp scampi and garnish with additional cilantro and lime wedges.
