 North Shore Shrimp Scampi

North Shore Shrimp Scampi

Inspired by the famous shrimp trucks of Hawaii’s North Shore, this North Shore Shrimp Scampi is packed with bold garlic flavor, a touch of butter, and a hint of tropical citrus. It’s simple to prepare, and its fresh and zesty flavors are sure to transport you to the islands.

Ingredients

(Serves 4)

  • 1 pound large shrimp, peeled and deveined (tails on for extra flavor, optional)
  • 6 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup chicken broth or dry white wine
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Steamed rice or crusty bread (for serving)

Instructions

1. Prepare the Shrimp

  • Rinse the shrimp and pat them dry with paper towels. Season lightly with salt and pepper.

2. Sauté the Garlic

  • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant but not browned.

3. Cook the Shrimp

  • Add the shrimp to the skillet and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

4. Make the Sauce

  • Lower the heat slightly and add the butter to the skillet. Stir until melted.
  • Add the lemon juice, chicken broth (or white wine), and red pepper flakes if using. Simmer for 2-3 minutes, stirring occasionally, to let the flavors meld.

5. Combine and Finish

  • Return the shrimp to the skillet and toss to coat them in the sauce. Cook for another 1-2 minutes to heat through.
  • Sprinkle with fresh parsley and adjust seasoning with salt and pepper to taste.

6. Serve

  • Serve immediately over steamed rice or alongside crusty bread to soak up the flavorful sauce. Garnish with extra parsley and lemon wedges if desired.

Tips

  • Freshness is Key: Use fresh shrimp for the best flavor, but frozen shrimp work well if thawed properly.
  • Make It Spicier: Add more red pepper flakes or a dash of hot sauce for extra heat.
  • Hawaiian Twist: Add a splash of pineapple juice to the sauce for a touch of tropical sweetness.
  • Sides: Pair with a green salad, grilled vegetables, or sautéed spinach for a complete meal.

This North Shore Shrimp Scampi delivers a burst of garlicky, buttery goodness that’s hard to resist. Aloha on a plate! 🦐🍋🍚
