Ingredients (Serves 8-10)
For the Graham Cracker Crust:
- 1 ½ cups graham cracker crumbs
- 1 tablespoon sugar
- ¼ teaspoon salt
- 6 tablespoons unsalted butter (melted)
For the Banana Custard Filling:
- 1 ½ cups whole milk
- 1 ½ cups heavy cream
- 1 cup sugar
- 4 large egg yolks
- ¼ cup cornstarch
- ¼ teaspoon salt
- 4 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 2 ripe bananas (sliced thinly)
For the Whipped Cream Topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
1️⃣ Make the Graham Cracker Crust:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and salt.
- Stir in melted butter until the mixture resembles wet sand.
- Press the mixture into the bottom and sides of a 9-inch pie pan.
- Bake for 10-12 minutes, until lightly golden and firm. Let it cool completely.
2️⃣ Make the Banana Custard Filling:
- In a saucepan, whisk together milk, heavy cream, and sugar over medium heat until it begins to simmer.
- In a separate bowl, whisk egg yolks, cornstarch, and salt until smooth.
- Gradually add the hot milk mixture into the egg yolks while whisking constantly to avoid curdling.
- Pour the egg mixture back into the saucepan and cook, whisking constantly, until the custard thickens (about 4-6 minutes).
- Remove from heat and stir in butter and vanilla extract until smooth.
- Let the custard cool to room temperature.
