This Banana Cream Pie from Momofuku Milk Bar features a deliciously buttery graham cracker crust, sweet banana custard, and a decadent whipped cream topping, all layered together for an unforgettable dessert!

Ingredients (Serves 8-10)

For the Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter (melted)

For the Banana Custard Filling:

  • 1 ½ cups whole milk
  • 1 ½ cups heavy cream
  • 1 cup sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 2 ripe bananas (sliced thinly)

For the Whipped Cream Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1️⃣ Make the Graham Cracker Crust:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and salt.
  3. Stir in melted butter until the mixture resembles wet sand.
  4. Press the mixture into the bottom and sides of a 9-inch pie pan.
  5. Bake for 10-12 minutes, until lightly golden and firm. Let it cool completely.

2️⃣ Make the Banana Custard Filling:

  1. In a saucepan, whisk together milk, heavy cream, and sugar over medium heat until it begins to simmer.
  2. In a separate bowl, whisk egg yolks, cornstarch, and salt until smooth.
  3. Gradually add the hot milk mixture into the egg yolks while whisking constantly to avoid curdling.
  4. Pour the egg mixture back into the saucepan and cook, whisking constantly, until the custard thickens (about 4-6 minutes).
  5. Remove from heat and stir in butter and vanilla extract until smooth.
  6. Let the custard cool to room temperature.

3️⃣ Assemble the Pie:

  1. Once the graham cracker crust has cooled, pour the cooled banana custard filling into the crust and smooth the top.
  2. Slice the bananas and layer them on top of the custard.
  3. Cover the pie with plastic wrap and refrigerate for at least 4 hours or overnight to set.

4️⃣ Make the Whipped Cream Topping:

  1. In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread the whipped cream evenly over the chilled pie.

5️⃣ Garnish & Serve:

  1. Slice the remaining banana into thin rounds and arrange them on top of the whipped cream.
  2. Refrigerate for another hour to allow everything to set properly.
  3. Serve chilled, and enjoy the creamy, rich, and decadent flavors!
