Mint Chocolate Brownies 🍫🌿
These Mint Chocolate Brownies are rich, fudgy, and perfectly balanced with a cool minty flavor. The combination of dark chocolate and a smooth mint layer makes them an irresistible treat for any occasion!
Ingredients
For the Brownie Base:
- ½ cup (1 stick) unsalted butter
- 1 cup semisweet chocolate chips
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ¼ tsp salt
- 2 tbsp unsweetened cocoa powder
For the Mint Layer:
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp heavy cream
- ½ tsp peppermint extract
- A few drops of green food coloring (optional)
For the Chocolate Ganache Topping:
- ¾ cup semisweet chocolate chips
- 3 tbsp heavy cream
- 1 tbsp unsalted butter
Instructions
1️⃣ Make the Brownie Base:
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and lightly grease it.
- In a microwave-safe bowl, melt butter and chocolate chips together in 30-second intervals, stirring between each until smooth. Let cool slightly.
- Whisk in sugar, then add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Sift in flour, salt, and cocoa powder, and gently fold until just combined.
- Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely before adding the mint layer.
2️⃣ Prepare the Mint Layer:
- In a mixing bowl, beat butter until creamy.
- Gradually mix in powdered sugar, followed by heavy cream, peppermint extract, and food coloring (if using).
- Spread evenly over the cooled brownies and place in the fridge for 20 minutes to firm up.
3️⃣ Make the Chocolate Ganache Topping:
- Heat heavy cream in a small saucepan or microwave until warm but not boiling.
- Pour over chocolate chips and let sit for 2 minutes. Stir until smooth, then mix in butter for extra shine.
- Pour ganache over the mint layer, spreading evenly. Refrigerate for at least 30 minutes before slicing.
