Ingredients

For the Brownie Base:

  • ½ cup (1 stick) unsalted butter
  • 1 cup semisweet chocolate chips
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ tsp salt
  • 2 tbsp unsweetened cocoa powder

For the Mint Layer:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • ½ tsp peppermint extract
  • A few drops of green food coloring (optional)

For the Chocolate Ganache Topping:

  • ¾ cup semisweet chocolate chips
  • 3 tbsp heavy cream
  • 1 tbsp unsalted butter

Instructions

1️⃣ Make the Brownie Base:

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and lightly grease it.
  2. In a microwave-safe bowl, melt butter and chocolate chips together in 30-second intervals, stirring between each until smooth. Let cool slightly.
  3. Whisk in sugar, then add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Sift in flour, salt, and cocoa powder, and gently fold until just combined.
  5. Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
