Mashed Cauliflower Recipe

Mashed cauliflower is a creamy, low-carb alternative to mashed potatoes, packed with flavor and easy to make.

Ingredients

(Serves 4)

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter (or olive oil for a vegan option)
  • 1/4 cup cream, milk, or unsweetened almond milk (optional, for extra creaminess)
  • 2 cloves garlic, minced (optional, for flavor)
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: chopped chives, parsley, or a sprinkle of Parmesan cheese

Instructions

1. Prepare the Cauliflower

  • Remove the outer leaves and stem of the cauliflower, then chop it into small florets.

2. Cook the Cauliflower

  • Steam: Place the florets in a steamer basket over boiling water. Cover and steam for 10-12 minutes, or until very tender.
  • Boil: Alternatively, boil the florets in salted water for 8-10 minutes, or until fork-tender. Drain thoroughly.

3. Mash the Cauliflower

  • Transfer the cooked cauliflower to a food processor or blender.
  • Add the butter, minced garlic (if using), and a splash of cream or milk (optional).
  • Blend until smooth and creamy. If you prefer a chunkier texture, mash by hand with a potato masher.

4. Season and Serve

  • Season with salt and freshly ground black pepper to taste.
  • Transfer to a serving dish and garnish with chopped chives, parsley, or Parmesan cheese if desired. Serve warm.

Tips

  • Drain Well: Ensure the cauliflower is well-drained to avoid watery mash. Let it sit for a few minutes after cooking to release excess moisture.
  • Roast for Extra Flavor: Roast the cauliflower in the oven before mashing for a nutty, caramelized flavor.
  • Additions: Mix in cream cheese, sour cream, or grated cheese for added richness.

This Mashed Cauliflower recipe is versatile, delicious, and pairs wonderfully with roasted meats, seafood, or vegetarian mains. 🥦✨
