Ingredients (Serves 4)

  • 4 large Yukon Gold or Russet potatoes, peeled and sliced 1/4-inch thick
  • 2 large onions, thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Potatoes:

    • Place the sliced potatoes in a pot of salted water. Bring to a boil and cook for 5-7 minutes until just tender but not fully cooked.
    • Drain the potatoes and set aside to cool slightly.
  2. Caramelize the Onions:

    • In a large skillet, heat 1 tbsp butter and 1 tbsp olive oil over medium heat.
    • Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until golden brown and caramelized, about 15-20 minutes.
