Low Carb Cauliflower Rice Recipe
Low Carb Cauliflower Rice Recipe
Cauliflower rice is a popular low-carb alternative to traditional rice. It’s light, fluffy, and can be used in place of rice in nearly any dish. Here's how to make it quickly and easily!
Ingredients
(Serves 4)
- 1 medium head of cauliflower (about 4 cups grated or processed)
- 1 tablespoon olive oil or butter
- 1/4 cup onion, finely chopped (optional)
- 2 cloves garlic, minced (optional)
- Salt and freshly ground black pepper, to taste
- Fresh herbs (parsley or cilantro) for garnish (optional)
Instructions
1. Prepare the Cauliflower
- Remove the outer leaves and stem from the cauliflower. Cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice-sized pieces. Alternatively, you can grate the cauliflower using a box grater.
2. Cook the Cauliflower Rice
- Heat the olive oil or butter in a large skillet over medium heat.
- If using, add the chopped onion and cook for about 2-3 minutes until softened. Then add the minced garlic and cook for another 30 seconds.
- Add the cauliflower rice to the skillet. Stir well to combine and cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but still slightly firm. You can cover the skillet for a few minutes to help steam the rice.
3. Season and Serve
- Season with salt and pepper to taste.
- Optional: Garnish with fresh herbs like parsley or cilantro for added flavor and color.
- Serve warm as a side dish or use it as a base for stir-fries, curries, or as a low-carb alternative to regular rice.
Tips
- For Extra Flavor: Sauté the cauliflower rice with a little soy sauce, lemon juice, or your favorite spices (like turmeric or cumin) for more depth of flavor.
- Make It Creamy: Add a splash of heavy cream or coconut milk for a creamier version.
- Storage: Leftover cauliflower rice can be stored in the fridge for 2-3 days. Reheat in the microwave or skillet before serving.
