This Lemon-Sugar Grilled Pineapple recipe is a sweet and tangy dessert or side dish that's easy to make and perfect for summer grilling. The caramelized sugar and bright lemon flavor make it irresistible!

Ingredients

(Serves 4)

  • 1 medium fresh pineapple
  • 1/4 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 teaspoon ground cinnamon (optional)
  • 2 tablespoons melted butter or neutral oil
  • Fresh mint leaves (for garnish, optional)

Instructions

1. Prepare the Pineapple

  • Slice off the top and bottom of the pineapple, then stand it upright and slice off the skin. Remove any remaining "eyes."
  • Cut the pineapple into rings, wedges, or spears, and remove the core if desired.

2. Make the Lemon-Sugar Mixture

  • In a small bowl, combine the sugar, lemon zest, and cinnamon (if using). Stir to mix evenly.

3. Brush and Coat

  • Brush the pineapple slices with melted butter or oil.
  • Sprinkle the lemon-sugar mixture evenly over both sides of the pineapple pieces.

4. Preheat the Grill

  • Preheat your grill to medium-high heat (375°F-400°F). Lightly oil the grates to prevent sticking.

5. Grill the Pineapple

  • Place the pineapple pieces on the grill. Cook for 2-3 minutes per side, or until grill marks form and the sugar caramelizes.
  • Brush with lemon juice while grilling for an extra tangy kick.

6. Serve

  • Remove the pineapple from the grill and transfer it to a serving platter. Garnish with fresh mint leaves if desired. Serve warm as a side, dessert, or topping.

Tips

  • Add Vanilla: Drizzle with a bit of vanilla extract before grilling for an extra layer of flavor.
  • Pairings: Serve with vanilla ice cream, whipped cream, or as a topping for pancakes or yogurt.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Enjoy cold or reheated.

This Lemon-Sugar Grilled Pineapple is an easy and delightful way to elevate your grilling game. 🍍🍋✨
