Lemon Parmesan Garlic Roasted Potatoes Recipe

These crispy, flavorful roasted potatoes are infused with garlic, lemon, and Parmesan cheese, making them a perfect side dish to complement any meal.

Ingredients

  • 2 lbs baby potatoes (or any small potatoes), halved
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried thyme (or 1 tsp fresh thyme)
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes:

    • In a large bowl, combine the halved potatoes, olive oil, minced garlic, lemon juice, lemon zest, thyme, oregano, red pepper flakes, salt, and pepper. Toss everything together until the potatoes are evenly coated.
  3. Roast the Potatoes:

    • Spread the potatoes in a single layer on the prepared baking sheet.
    • Roast for 25-30 minutes, or until the potatoes are golden and crispy, flipping them halfway through the cooking time for even browning.
  4. Add Parmesan and Finish:

    • When the potatoes are done, remove them from the oven and immediately sprinkle the grated Parmesan cheese over the hot potatoes.
    • Toss the potatoes gently to coat them in the cheese.
  5. Serve:

    • Garnish with fresh parsley and a squeeze of lemon juice for extra brightness, if desired.
    • Serve hot and enjoy!

Serving Suggestions

These roasted potatoes are a great side for grilled meats, roasted chicken, or as a part of a veggie platter. They pair especially well with fresh salads or sautéed greens.

Tips:

  • For extra crispiness, you can broil the potatoes for the last 2-3 minutes of cooking.
  • Add extra lemon zest or Parmesan cheese to taste for more flavor!
