Ingredients

  • 2 lbs baby potatoes (or any small potatoes), halved
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried thyme (or 1 tsp fresh thyme)
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Potatoes:

    • In a large bowl, combine the halved potatoes, olive oil, minced garlic, lemon juice, lemon zest, thyme, oregano, red pepper flakes, salt, and pepper. Toss everything together until the potatoes are evenly coated.
  3. Roast the Potatoes:

    • Spread the potatoes in a single layer on the prepared baking sheet.
    • Roast for 25-30 minutes, or until the potatoes are golden and crispy, flipping them halfway through the cooking time for even browning.
