Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • Zest and juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth or water
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish, optional)

Instructions:

  1. Sauté the Chicken:

    • Set your Instant Pot to Sauté mode and add olive oil.
    • Once hot, add the chicken breasts (or thighs) and sear for 2-3 minutes per side, until they’re lightly browned. You may need to work in batches depending on the size of your Instant Pot.
    • Remove the chicken and set aside.
  2. Prepare the Lemon Sauce:

    • Add the garlic to the Instant Pot and sauté for about 30 seconds until fragrant.
    • Add the chicken broth, lemon juice, lemon zest, oregano, thyme, salt, and pepper. Stir to combine and scrape up any browned bits from the bottom of the pot to prevent burning.
  3. Pressure Cook:

    • Place the seared chicken back into the Instant Pot, nestling it into the sauce.
    • Secure the lid and set the Instant Pot to Manual/Pressure Cook on High for 8 minutes if using chicken breasts, or 10 minutes for chicken thighs.
    • Once cooking is complete, allow the pressure to naturally release for 5 minutes, then perform a quick release to let out the remaining pressure.
  4. Serve:

    • Remove the chicken from the pot and place it on a plate.
    • If you’d like the sauce to thicken, set the Instant Pot to Sauté mode and let the sauce simmer for a few minutes until it reaches your desired consistency.
    • Pour the sauce over the chicken and garnish with chopped parsley and lemon slices for a fresh finish.
