Ingredients

  • 1 cup long-grain white rice (e.g., basmati or jasmine)
  • 1 1/4 cups water or chicken broth
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • Zest of 1 lime
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, finely chopped

Instructions

  1. Rinse the Rice:
    Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.

  2. Sauté the Rice (Optional):
    Turn the Instant Pot to sauté mode. Add olive oil or butter and stir in the rinsed rice. Sauté for 2-3 minutes, stirring frequently, until slightly fragrant.

  3. Add Liquid and Salt:
    Turn off sauté mode. Pour in water or chicken broth, add salt, and stir to combine.

  4. Cook the Rice:
    Secure the lid on the Instant Pot, ensuring the valve is set to the sealing position.
