Instant Pot Cilantro Lime Rice Recipe
Ingredients
- 1 cup long-grain white rice (e.g., basmati or jasmine)
- 1 1/4 cups water or chicken broth
- 1 tbsp olive oil or butter
- 1/2 tsp salt
- Zest of 1 lime
- 2 tbsp fresh lime juice
- 1/4 cup fresh cilantro, finely chopped
Instructions

Rinse the Rice:
Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well. -
Sauté the Rice (Optional):
Turn the Instant Pot to sauté mode. Add olive oil or butter and stir in the rinsed rice. Sauté for 2-3 minutes, stirring frequently, until slightly fragrant. -
Add Liquid and Salt:
Turn off sauté mode. Pour in water or chicken broth, add salt, and stir to combine. -
Cook the Rice:
Secure the lid on the Instant Pot, ensuring the valve is set to the sealing position.- Select manual or pressure cook mode.
- Set the timer for 4 minutes at high pressure.

Natural Release:
Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Afterward, carefully release any remaining pressure by moving the valve to the venting position. -
Fluff and Add Flavor:
Open the lid and fluff the rice with a fork. Stir in lime zest, lime juice, and chopped cilantro. -
Serve:
Serve warm as a side dish for tacos, burritos, grilled chicken, or fish.
Tips:
- For extra flavor, add a minced garlic clove or a small bay leaf during cooking.
- Adjust lime juice and cilantro to your taste.
