Instant Pot Cauliflower Rice Recipe

Instant Pot Cauliflower Rice Recipe

Making cauliflower rice in the Instant Pot is a quick and easy way to prepare a healthy, low-carb alternative to traditional rice. This method results in perfectly cooked cauliflower rice every time, with minimal effort!

Ingredients

(Serves 4)

  • 1 medium head of cauliflower (about 4 cups grated or processed into rice-sized pieces)
  • 1 tablespoon olive oil or butter
  • 1/4 cup onion, finely chopped (optional)
  • 2 cloves garlic, minced (optional)
  • 1/4 cup water or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (parsley or cilantro) for garnish (optional)

Instructions

1. Prepare the Cauliflower

  • Remove the outer leaves and stem from the cauliflower. Cut it into florets.
  • Using a food processor, pulse the cauliflower florets until they resemble rice-sized pieces. Alternatively, you can grate the cauliflower using a box grater.

2. Sauté (Optional)

  • Set your Instant Pot to the "Sauté" function and add the olive oil or butter.
  • If using, add the chopped onion and cook for 2-3 minutes, until softened. Add the garlic and cook for an additional 30 seconds, stirring constantly.

3. Cook the Cauliflower Rice

  • Add the grated cauliflower to the Instant Pot and stir to combine with the sautéed onions and garlic (if using).
  • Pour in the water or vegetable broth and season with salt and pepper.
  • Close the lid and set the Instant Pot to "Manual" (or "Pressure Cook") for 1 minute. Ensure the valve is set to "Sealing."

4. Quick Release and Serve

  • Once the cooking time is complete, carefully perform a quick release of the pressure by turning the valve to "Venting."
  • Open the lid and fluff the cauliflower rice with a fork to separate the grains.
  • Taste and adjust seasoning if necessary.
  • Garnish with fresh herbs like parsley or cilantro, if desired.

5. Serve

  • Serve the cauliflower rice as a side dish or use it as a base for stir-fries, curries, or any dish that typically uses rice.

Tips

  • For Extra Flavor: Add a splash of soy sauce, lemon juice, or a sprinkle of nutritional yeast for a cheesy flavor.
  • Make It Crispy: After cooking, spread the cauliflower rice on a baking sheet and broil for 2-3 minutes to crisp it up.
  • Storage: Leftover cauliflower rice can be stored in the refrigerator for up to 3 days. Reheat it in the microwave or on the stovetop.

This Instant Pot Cauliflower Rice is a quick, easy, and healthy side dish, perfect for anyone following a low-carb or keto lifestyle! 🍚
