Instructions

1. Prepare the Cauliflower

  • Remove the outer leaves and stem from the cauliflower. Cut it into florets.
  • Using a food processor, pulse the cauliflower florets until they resemble rice-sized pieces. Alternatively, you can grate the cauliflower using a box grater.

2. Sauté (Optional)

  • Set your Instant Pot to the "Sauté" function and add the olive oil or butter.
  • If using, add the chopped onion and cook for 2-3 minutes, until softened. Add the garlic and cook for an additional 30 seconds, stirring constantly.

3. Cook the Cauliflower Rice
