Ingredients:

  • 4 boneless, skinless chicken thighs (or drumsticks)
  • 1/2 cup soy sauce (low sodium)
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1/4 cup water
  • 6 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar (optional, for a touch of sweetness)
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon paprika (optional, for added flavor)
  • 1 tablespoon cornstarch (for thickening, optional)

Instructions:

  1. Prepare the Marinade:

    • In a bowl, mix the soy sauce, vinegar, water, smashed garlic, bay leaves, black peppercorns, salt, and optional brown sugar, onion powder, and paprika. Stir well to combine.
  2. Marinate the Chicken:

    • Place the chicken thighs (or drumsticks) into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it's fully coated.
    • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours, for the best flavor.
  3. Sauté the Chicken:

    • Set your Instant Pot to “Sauté” mode and add the olive oil. Once the pot is hot, add the marinated chicken (without the marinade) and brown each side for about 2-3 minutes until lightly golden.
  4. Add the Marinade:

    • Once the chicken is browned, pour the remaining marinade into the Instant Pot. Stir the sauce and scrape the bottom to ensure nothing is stuck to the pot.
  5. Pressure Cook:

    • Secure the lid of the Instant Pot and set the valve to "Sealing."
    • Set the Instant Pot to "Manual" or "Pressure Cook" on high for 12 minutes (for boneless thighs) or 15 minutes (for bone-in chicken).
    • When the cooking time is complete, allow the pressure to naturally release for 5 minutes, then manually release any remaining pressure.
  6. Optional Thickening (If Desired):

    • If you prefer a thicker sauce, remove the chicken from the pot and set it aside. Turn the Instant Pot back to "Sauté" mode, and in a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry.
    • Stir the slurry into the sauce and cook for 2-3 minutes until thickened. Then, return the chicken to the pot to coat it in the sauce.

Tips:
