These flavorful skewers balance sweetness, tang, and heat, making them perfect for grilling season or a quick and easy dinner.

Ingredients:

  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 3 tablespoons honey
  • 2 tablespoons Sriracha
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Skewers (soak in water for 30 minutes if using wooden skewers)

Instructions:

  1. Prepare the Marinade:

    • In a large bowl, whisk together honey, Sriracha, soy sauce, lime juice, olive oil, minced garlic, and grated ginger.
  2. Marinate the Chicken:

    • Add the chicken cubes to the marinade, tossing to coat evenly.
    • Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Assemble the Skewers:

    • Preheat your grill or grill pan over medium-high heat.
    • Thread the marinated chicken onto skewers, leaving a small gap between each piece for even cooking.
  4. Grill the Skewers:

    • Lightly oil the grill grates to prevent sticking.
    • Place the skewers on the grill and cook for 10-12 minutes, turning every few minutes, until the chicken is cooked through and slightly charred.
  5. Serve:

    • Transfer the skewers to a serving platter.
    • Garnish with fresh lime wedges and chopped cilantro, if desired.

Tips:

  • Adjust the heat: Add more or less Sriracha depending on your spice preference.
  • Serve with sides: These skewers pair well with rice, a fresh salad, or grilled vegetables.
  • Leftovers: Store in an airtight container in the fridge for up to 3 days. Reheat gently before serving.

These chicken skewers are a hit for BBQs, weeknight dinners, or as a flavorful appetizer!
