Ingredients:

  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • 3 tablespoons honey
  • 2 tablespoons Sriracha
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Skewers (soak in water for 30 minutes if using wooden skewers)

Instructions:

  1. Prepare the Marinade:

    • In a large bowl, whisk together honey, Sriracha, soy sauce, lime juice, olive oil, minced garlic, and grated ginger.
  2. Marinate the Chicken:

    • Add the chicken cubes to the marinade, tossing to coat evenly.
    • Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
