- 1 lb (450g) scallops, rinsed and patted dry
- 1 lb (450g) cooked crawfish
Marinade/Butter Sauce:
- 1 cup (230g) unsalted butter, melted
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon Old Bay seasoning

- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper (optional, for spice)
Optional sides:
- Grilled corn on the cob
- Garlic bread
Instructions
-
Preheat Grill:
Preheat your grill to medium-high heat (400°F/200°C). Lightly oil the grates to prevent sticking.
-
Prepare the Marinade:
- In a small bowl, whisk together melted butter, garlic, parsley, smoked paprika, Old Bay seasoning, lemon juice, salt, black pepper, and cayenne (if using). Reserve some for basting and extra for dipping later.
-
Prepare the Seafood:
- Toss shrimp and scallops in half of the marinade.
- If your crab legs are precooked (most are), lightly brush them with the marinade.
- Crawfish can be reheated on the grill—brush with marinade for added flavor.
-
Grill the Seafood:
- Crab Legs: Place on the grill and cook for 5–7 minutes, turning occasionally, until heated through and slightly charred.
- Shrimp: Grill for 2–3 minutes per side, or until pink and opaque.
- Scallops: Sear on the grill for 2–3 minutes per side, until golden and cooked through.
- Crawfish: Grill for 4–5 minutes, turning frequently, until warmed and lightly charred.
-
Baste While Grilling:
- Brush the seafood with the reserved marinade during grilling to enhance flavor.
-
Serve:
- Arrange the grilled snow crab, shrimp, scallops, and crawfish on a large platter.
- Garnish with extra parsley and serve with lemon wedges and the remaining butter sauce for dipping.
-
Optional Sides:
- Pair with grilled corn, garlic bread, or a fresh green salad for a complete meal.
