  • 2 tbsp honey
  • 2 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Marinade:

    • In a small bowl, whisk together the honey, sriracha sauce, soy sauce, rice vinegar, minced garlic, and grated ginger (if using). Taste and adjust the heat by adding more sriracha if you like it spicier. Add a pinch of salt and pepper.
  2. Marinate the Chicken:

    • Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the Grill:
