Greek Yogurt Green Goddess Dressing

Greek Yogurt Green Goddess Dressing

Greek Yogurt Green Goddess Dressing

Ingredients

  • 1 cup plain Greek yogurt
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh tarragon, chopped (optional)
  • 1 clove garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 2-3 anchovy fillets (optional, but adds authentic flavor)
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste
  • Water to thin, as needed

Instructions

  1. Blend the Ingredients:

    • In a food processor or blender, combine the Greek yogurt, parsley, chives, tarragon, garlic, lemon juice, white wine vinegar, olive oil, anchovies (if using), and Dijon mustard.
    • Blend until smooth and creamy.
  2. Adjust Consistency and Flavor:

    • If the dressing is too thick, add a little water, one tablespoon at a time, until you reach your desired consistency.
    • Taste the dressing and adjust the seasoning with salt and pepper to taste. If you like it tangier, you can add a little more lemon juice or vinegar.
  3. Refrigerate:

    • For the best flavor, refrigerate the dressing for at least 30 minutes before serving to allow the flavors to meld together.
  4. Serve:

    • Drizzle over salads, roasted vegetables, or use as a dip for fresh veggies.

Tips:

  • You can substitute the anchovies with 1 tsp of capers for a vegetarian version.
  • This dressing is perfect for a creamy, herbaceous salad dressing or as a topping for grilled chicken, fish, or wraps.
  • Store any leftover dressing in an airtight container in the fridge for up to a week.
