Greek Roasted Potatoes

Ingredients:

  • 4 large russet potatoes, peeled and cut into wedges
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1/2 tsp dried thyme (optional)
  • 1/2 tsp paprika (optional for extra color)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup chicken or vegetable broth
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1 tbsp crumbled feta cheese (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Potatoes:

    • Peel and cut the potatoes into wedges (or chunks if you prefer). Place them in a large bowl.
  3. Season the Potatoes:

    • Add the olive oil, lemon juice, minced garlic, dried oregano, thyme (if using), paprika (optional), salt, and pepper to the potatoes. Toss the potatoes well to coat them evenly in the seasoning mixture.
  4. Add the Broth:

    • Pour the chicken or vegetable broth over the potatoes. The broth will help keep the potatoes moist while roasting and infuse them with flavor.
  5. Roast the Potatoes:

    • Spread the potatoes evenly in a single layer on the prepared baking sheet. Roast in the preheated oven for 40-45 minutes, turning the potatoes halfway through cooking, until they are golden brown and crispy on the edges.
  6. Finish and Serve:

    • Once the potatoes are crispy and tender, remove them from the oven. Garnish with freshly chopped parsley and crumbled feta cheese if desired.

Tips:

  • For Extra Crispy Potatoes: After the potatoes are roasted, broil them for an additional 2-3 minutes to get them extra crispy.
  • Flavor Variation: For a smoky flavor, you can add a pinch of smoked paprika.
  • Serving Suggestion: These Greek roasted potatoes make a great side dish for grilled meats, especially lamb or chicken, and pair well with a simple Greek salad.

Enjoy these crispy, lemony, and herb-infused Greek roasted potatoes! 🥔🍋
