This German Potato Salad is a warm, tangy, and savory dish made with tender potatoes, crispy bacon, and a flavorful vinaigrette. Unlike traditional American potato salad, it doesn't use mayonnaise and is served warm, making it a perfect side dish for BBQs, picnics, or holiday meals.


Ingredients

(Serves 4-6)

For the Salad:

  • 2 pounds small red potatoes (or yellow potatoes), cut into bite-sized chunks
  • 6 slices of bacon, diced
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt and freshly ground black pepper, to taste

For the Vinaigrette:

  • 1/4 cup apple cider vinegar (or white wine vinegar)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 cup chicken broth (or vegetable broth for a vegetarian version)
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

1. Cook the Potatoes

  • Place the cut potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil over high heat.
  • Reduce the heat to medium and cook the potatoes for about 10-15 minutes, or until they are fork-tender. Drain the potatoes and set them aside.

2. Prepare the Bacon and Vinaigrette

  • Cook the Bacon: In a large skillet, cook the diced bacon over medium heat until it becomes crispy, about 5-7 minutes. Once crispy, remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain excess grease.
  • Make the Vinaigrette: In the same skillet with the bacon drippings, add the finely chopped onion and sauté for 2-3 minutes until softened.
  • In a small bowl, whisk together the apple cider vinegar, Dijon mustard, sugar, chicken broth, olive oil, salt, and pepper. Pour this mixture into the skillet with the onions and cook for 1-2 minutes, allowing the flavors to meld and the dressing to slightly thicken.

3. Assemble the Salad

  • In a large mixing bowl, combine the cooked potatoes, bacon, and onion vinaigrette mixture. Stir gently to coat the potatoes with the dressing.
  • Season with additional salt and pepper to taste.
  • Garnish with freshly chopped parsley.

4. Serve
