Ingredients:

  • 2 large roasted red bell peppers (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ cup vegetable broth (or chicken broth)
  • ¼ cup heavy cream (optional, for a creamy version)
  • 1 teaspoon paprika
  • ½ teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil or parsley, chopped

Instructions:

  1. Roast the Peppers (if making homemade):

    • Preheat oven to 450°F (230°C). Place whole bell peppers on a baking sheet and roast for 20–25 minutes, turning occasionally, until the skin is charred.
    • Remove from oven, place in a bowl, and cover with plastic wrap for 10 minutes. Peel off the skin, remove seeds, and set aside.
  2. Sauté Aromatics:

    • Heat olive oil in a skillet over medium heat. Add onion and garlic, sautéing until soft and fragrant, about 3–4 minutes.
  3. Blend the Sauce:

    • In a blender or food processor, combine roasted peppers, sautéed onion and garlic, and vegetable broth. Blend until smooth.
  4. Simmer and Season:

    • Pour the blended mixture back into the skillet. Stir in paprika, red pepper flakes, salt, and black pepper. Simmer for 5–7 minutes to deepen the flavor.
    • For a creamy sauce, stir in heavy cream during the last few minutes of cooking.
  5. Serve:

    • Toss with pasta, drizzle over grilled chicken or fish, or serve as a dip with crusty bread or fresh veggies. Garnish with fresh basil or parsley.
