Serves: 4
Prep Time: 15 minutes
Cook Time: 10 minutes (plus resting time)

Ingredients

For the Steak:

  • 1½ lbs (700g) flat iron steak (or flank steak)
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder

For the Creamy Peruvian Green Sauce:

  • 1 cup (240ml) mayonnaise or Greek yogurt (for a lighter option)
  • 1 bunch cilantro (leaves and tender stems, about 1 cup packed)
  • 1 small jalapeño, seeds removed (or leave them for extra heat)
  • 2 garlic cloves
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon white vinegar
  • ½ teaspoon cumin
  • Salt and black pepper, to taste

Instructions

1. Marinate and Season the Steak:

  • Pat the steak dry with paper towels.
  • Rub olive oil all over the steak, then season generously with salt, pepper, smoked paprika, and garlic powder.
  • Let it sit at room temperature for 15–20 minutes.

2. Make the Peruvian Green Sauce:

  • In a blender or food processor, combine cilantro, jalapeño, garlic, lime juice, olive oil, vinegar, cumin, and mayonnaise (or Greek yogurt).
  • Blend until smooth and creamy. Taste and adjust seasoning with salt and pepper.
  • Transfer to a bowl and refrigerate until ready to use.

3. Cook the Steak:

  • Heat a large skillet or grill pan over high heat.
  • Cook the steak for 3–4 minutes per side for medium-rare, or longer depending on your desired doneness. Use a meat thermometer for accuracy (135°F for medium-rare, 145°F for medium).
  • Remove the steak from the heat and let it rest for 5–10 minutes before slicing.

4. Serve:

  • Slice the steak thinly against the grain.
  • Drizzle the creamy Peruvian green sauce over the slices or serve it on the side as a dipping sauce.

Serving Suggestions

  • Pair with roasted potatoes, grilled vegetables, or a fresh green salad.
  • Add warm rice or quinoa for a hearty, balanced meal.

Enjoy this bold and flavorful dish that’s perfect for any occasion! 🌿🥩
