Easy Chicken Kebabs Recipe

Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs), cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric (optional for color)
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional for garnish)
  • 1 onion, cut into chunks (optional, for grilling)
  • 1 bell pepper, cut into chunks (optional, for grilling)
  • Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)

Instructions

  1. Prepare the Marinade:

    • In a bowl, combine the olive oil, lemon juice, garlic powder, paprika, ground cumin, turmeric (if using), salt, and pepper. Stir well to combine.
  2. Marinate the Chicken:

    • Add the cubed chicken to the bowl with the marinade. Toss the chicken well to ensure all the pieces are coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Prepare the Skewers:

    • If you're using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling. Thread the marinated chicken pieces onto the skewers, alternating with chunks of onion and bell pepper if desired.
  4. Preheat the Grill:

    • Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.
  5. Grill the Kebabs:

    • Place the skewers on the grill and cook for about 5-7 minutes per side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). Turn the skewers occasionally to ensure even cooking on all sides.
  6. Serve:

    • Once the chicken is cooked through, remove the kebabs from the grill. Garnish with fresh parsley if desired and serve with rice, flatbreads, or a side salad.

Tips:

  • Vegetable Options: Feel free to add other vegetables such as zucchini, cherry tomatoes, or mushrooms to the skewers for added flavor and variety.
  • Spicy Kick: If you prefer spicier kebabs, add red pepper flakes or cayenne pepper to the marinade.
  • Serve with: These kebabs pair perfectly with tzatziki sauce, hummus, or a yogurt-based dip.

Enjoy your juicy, flavorful chicken kebabs! 🍗🥒
