  • 8 bone-in, skin-on chicken thighs
  • 3 tbsp Dijon mustard
  • 2 tbsp whole-grain mustard (optional)
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Marinade:

    • In a small bowl, whisk together Dijon mustard, whole-grain mustard, olive oil, honey, minced garlic, apple cider vinegar, thyme, salt, and pepper.
  2. Marinate the Chicken:

    • Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated.
    • Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably 4-6 hours for deeper flavor.
  3. Preheat the Grill:

    • Preheat your grill to medium heat (around 375°F/190°C).
