Cilantro-and-Lime Marinated Chicken Fajita Kebabs
These zesty, flavorful kebabs bring together the freshness of lime and cilantro with the warmth of fajita spices, perfect for grilling or roasting. Here's how to make them:
Ingredients (Serves 4)
For the Marinade:
- 1/4 cup fresh lime juice (about 2 limes)
- 3 tbsp olive oil
- 2 tbsp chopped fresh cilantro
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Kebabs:
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- Wooden or metal skewers
Instructions

Prepare the Marinade:
In a large bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, smoked paprika, salt, and pepper. -
Marinate the Chicken:
Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor. -
Preheat and Prep:
Preheat your grill to medium-high heat or set your oven to 425°F (220°C) if roasting. If using wooden skewers, soak them in water for 20-30 minutes to prevent burning. -
Assemble the Kebabs:
Thread the marinated chicken, bell peppers, and onion onto skewers, alternating the ingredients for a colorful presentation. -
Cook the Kebabs:
- Grilling: Place the kebabs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Oven Roasting: Place the kebabs on a baking sheet and roast for 15-20 minutes, flipping halfway, until the chicken is fully cooked and vegetables are tender.

Garnish with additional fresh cilantro and a squeeze of lime. Serve with rice, tortillas, or a fresh salad.
