Ingredients (Serves 4)

For the Marinade:

  • 1/4 cup fresh lime juice (about 2 limes)
  • 3 tbsp olive oil
  • 2 tbsp chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Kebabs:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade:
    In a large bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, smoked paprika, salt, and pepper.

  2. Marinate the Chicken:
    Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

  3. Preheat and Prep:
    Preheat your grill to medium-high heat or set your oven to 425°F (220°C) if roasting. If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.

  4. Assemble the Kebabs:
    Thread the marinated chicken, bell peppers, and onion onto skewers, alternating the ingredients for a colorful presentation.

  5. Cook the Kebabs:

    • Grilling: Place the kebabs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
    • Oven Roasting: Place the kebabs on a baking sheet and roast for 15-20 minutes, flipping halfway, until the chicken is fully cooked and vegetables are tender.
  6. Serve:
