Ingredients (Makes about 12-16 brownies)
For the Brownie Base:
- ½ cup unsalted butter (melted)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ½ cup semi-sweet chocolate chips
For the Chocolate Mousse:
- 8 oz dark chocolate (chopped into small pieces)
- 2 teaspoons vanilla extract
- 1 ½ cups heavy cream
- 2 tablespoons powdered sugar (optional, for added sweetness)
Instructions
1️⃣ Make the Brownie Base:
- Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, and eggs until smooth and creamy.
- Stir in the vanilla extract and cocoa powder until well combined.
- Add the flour, salt, and baking powder, and mix until just combined.
- Fold in the semi-sweet chocolate chips for extra chocolatey goodness.
- Pour the brownie batter into the prepared pan and spread it evenly.

- Refrigerate the assembled brownies for at least 2 hours to allow the mousse to set and firm up.
