Chocolate Crepe Tower 🍫🎂
This Chocolate Crepe Tower is an impressive, indulgent dessert that combines soft, delicate crepes with rich, velvety chocolate ganache. It’s perfect for special occasions or when you want to wow your guests with something extraordinary!
Ingredients (Makes about 8-10 layers)
For the Crepes:
- 1 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons sugar
- ½ teaspoon salt
- 1 ½ cups milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 8 ounces semi-sweet chocolate, chopped
- ½ cup heavy cream
- 2 tablespoons unsalted butter
For Garnish (optional):
- Whipped cream
- Fresh berries (strawberries, raspberries, etc.)
- Shaved chocolate or chocolate curls
Instructions
1️⃣ Make the Crepes:
- In a large bowl, whisk together flour, cocoa powder, sugar, and salt.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth and lump-free. The batter should be thin—if it’s too thick, add a little more milk to achieve the right consistency.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter or cooking spray.
- Pour about ¼ cup of batter into the pan and swirl it around to form a thin, even layer. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 30 seconds.
- Repeat the process until all the batter is used, stacking the crepes on a plate as you go. Let them cool slightly.
2️⃣ Make the Chocolate Ganache:
- Place the chopped chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream and butter over medium heat until it starts to simmer (don’t let it boil).
- Pour the hot cream mixture over the chopped chocolate. Let it sit for a minute to melt, then stir until smooth and glossy. Set aside to cool slightly.
3️⃣ Assemble the Crepe Tower:
- Place the first crepe on a serving platter or cake stand.
- Spread a thin layer of chocolate ganache over the crepe, then place another crepe on top. Repeat this process, stacking the crepes and ganache layer by layer, until you’ve used all the crepes. You should have about 8-10 layers.
- Drizzle any remaining ganache over the top layer of the tower. You can also add extra whipped cream, shaved chocolate, or fresh berries for a decorative touch.
4️⃣ Serve:
- Allow the tower to sit for about 15 minutes to set before serving, so the ganache firms up a little.
- Slice into wedges and serve with more whipped cream or berries if desired.
Tips for Success:
- Crepes: The crepes can be made ahead of time. Store them in the fridge, layered with parchment paper, for up to 2 days, or freeze for up to 1 month.
- Ganache: If you want a thicker ganache, use more chocolate and less cream. For a thinner ganache, add a bit more cream.
- Flavor Twist: You can flavor the ganache with a splash of vanilla extract, coffee, or orange zest for a unique twist.
This Chocolate Crepe Tower is a luxurious dessert that’s sure to impress with its layers of delicate crepes and rich chocolatey goodness! 🍫🍰
