Ingredients
- 1 cup fresh parsley leaves, packed
- 1/2 cup fresh cilantro leaves (optional)
- 4 cloves garlic, minced
- 2 tbsp red wine vinegar
- 1/2 cup olive oil
- 1/2 tsp red pepper flakes (adjust to taste)
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- Juice of 1/2 lemon (optional, for brightness)

Prepare the Herbs:
Finely chop the parsley and cilantro (if using). Alternatively, pulse them in a food processor for a few seconds. -
Mix the Ingredients:
In a medium bowl, combine the chopped parsley, cilantro, garlic, red wine vinegar, and red pepper flakes. -
Add Oil and Seasonings:
Slowly whisk in the olive oil until the mixture is well combined. Add dried oregano, salt, and black pepper to taste. -
Adjust Flavors:
Taste and adjust seasoning. Add lemon juice if desired for extra tanginess. -
Serve:
Let the chimichurri rest for 10-15 minutes to allow the flavors to meld. Serve as a sauce for grilled meats, fish, or roasted vegetables.
Storage:
Store in an airtight container in the refrigerator for up to a week. Bring to room temperature before serving.
