  • 1 cup fresh parsley leaves, packed
  • 1/2 cup fresh cilantro leaves (optional)
  • 4 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/2 cup olive oil
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Juice of 1/2 lemon (optional, for brightness)

Instructions

  1. Prepare the Herbs:
    Finely chop the parsley and cilantro (if using). Alternatively, pulse them in a food processor for a few seconds.

  2. Mix the Ingredients:
    In a medium bowl, combine the chopped parsley, cilantro, garlic, red wine vinegar, and red pepper flakes.

  3. Add Oil and Seasonings:
    Slowly whisk in the olive oil until the mixture is well combined. Add dried oregano, salt, and black pepper to taste.

  4. Adjust Flavors:
